The Extra Virgin Olive Oil Sobroso Homestead is obtained from olives of the variety Galega, from olive grove itself 100 years old. The olive trees are planted in an extensive system with compass 11x11 meters, thereby enabling the reconciliation of culture with sheep cattle grazing, ancestral practices in the region.
The Olive grove is a small plain 200 meters above sea level with gentle slope and exposure south and west. This location associated with the climate of the area, allows olives to obtain high quality and precocious maturation, allowing the olive harvesting before the first winter rains thus ensuring a high quality of the olive the entrance of the mill.
The olive picking is entirely made by hand and the olives are processed at the mill on the same day of harvesting. Thus can be obtained a rich oil aromatically and low acidity.
